Everyone seemed to LOVE the last crockpot challenge so I thought it was time to do it again! Up for grabs is five $5 Amazon gift cards and this time the winners will be randomnly chosen from all entries!

Enter as many recipes as you like, just make sure to post a comment for EACH one. If you entered a recipe in the last contest PLEASE post it again to enter, I have gotten a ton of requests for those old recipes and unfortunately those were lost when I moved the site. Sorry about that!

    I like to make italian beefs in my crock pot. i use a roast with DRY italian dressing, onions, sweet peppers and water to cover…cook until it falls apart (6-8 hours) and serve on a hard roll.

    This isn’t exactly exciting, but I like to use my crockpot to cook a whole chicken. I just sprinkle a LOT of seasoning (seasoned salt, GrillMates, whatever you like) inside and out, plop it in the crockpot and cook it on high for 3-4 hours. Use a thermometer to check for doneness. Then serve it with sides or cut up the meat for tacos, BBQ chicken sandwiches or whatever.

    Easy way to cook chickens when they go on sale!

    Not your Mama’s Italian beef

    1 3lb roast
    1 beer
    1 bulb….blub not glove of garlic
    1 can of beef consume
    1 16 oz. peperchinis

    Put it all in and cook on high for 6-8 hours. Server on hoggies with italian blend cheese and bananna pepers.

    i was going to share something similar to angie! i love to cook whole chickens this way! i also place a stalk of celery in the chicken if i have some on hand..it adds a nice flavor!
    i will go one step further with that recipe on how to make chicken broth after you cook a whole chicken! (i will never buy store bought broth again!)
    take all of the leftover parts of the chicken (bones, skin, drippings from the cooking of the whole chicken, etc) and throw it all back in the crock pot (sometimes i even put it in the crock pot and store in the fridge to make this the next day)…cover with water…maybe 8 cups worth or so, depending on how strong you want your broth…cover and cook on low for as long as you want..strain and you have wonderful chicken broth! i often freeze it in ziplock bags in 2 cup measures for recipes or to add to rice mixes instead of water or for soups! you could add onion or anything you would like to flavor your broths now or when you first cook your chicken…

    After cooking a pot roast in my crock pot, the next day I like to add water and bbq sauce and let it simmer while at work. Come home and have pulled pork/beef (whichever roast we ate).

    We also like red beans and lima beans. Just fry what meat you are using and then add to the beans. May have to use a little cornstarch to thicken them to the consistency of your choosing and a side of rice!

    Here is an awesome easy and cheap dish for the 4th in a Crock! This would be easy to make ahead for camping or bringing to a cook out!

    Pepperocini Pulled Pork Sandwiches!
    1 2-3 lb. Pork butt lay it in the crock pot with the fatty side pointing up, this way the juices self baste the pork making it extra tender.
    1 extra large jar of pepperocini peppers, cut off the stems and then put in all the peppers and the juices.
    1 cup of water
    1 medium diced onion
    1tablespoon garlic powder
    1 teaspoon fresh cracked pepper
    1/2 teaspoon salt
    Cook 4-6 hours on low or 8 hours on high
    After the pork is done simply use a fork to shred the pork and stir.
    Serve the pulled pork on potato rolls or your favorite buns or better yet garlic toast. This is delicious and for those that love it spicy you can add hot sauce to your sandwich!!!

    Thai Peanut Pork
    2 lb pork roast/loin/chops – whatever you have on hand works
    2 tbls rice vinegar
    1-2 tsp (depending on hot desired) red pepper flakes
    1/4 cup peanut butter
    1/3 cup teriyaki sauce (must be a thick sweet one like La Choy)
    2 red peppers, sliced

    Put pork, vinegar, and teriyaki sauce in crock pot. Add Pepper Flakes to desired. Cook on low for 4 hours. Add pepper slices, cook 2 more hours. Add peanut butter, stir into sauce. Serve over rice. My family LOVES this!

    Slow Cooker Pulled Pork

    *the easiest and tastiest recipe ever*

    Ingredients
    1 (2 pound) pork tenderloin
    1 (12 fluid ounce) can or bottle root beer
    1 (18 ounce) bottle your favorite barbecue sauce
    8 hamburger buns, split and lightly toasted

    Place the pork tenderloin in a slow cooker; pour the root beer over the meat. Cover and cook on low until well cooked and the pork shreds easily, 6 to 7 hours. Note: the actual length of time may vary according to individual slow cooker. Drain well. Stir in barbecue sauce. Serve over hamburger buns.

    Chicken Enchiladas
    1 large can cream of chicken soup
    4 oz cream cheese
    4 chicken breasts
    2 dozen tortillas (flour or corn)
    1 small can chopped green chilies
    2 pkg. cheddar cheese, grated
    Boil chicken until cooked through. Cube.
    In saucepan, mix cream cheese, cream of chicken soup, 1 pkg of cheese, and green chilies until thoroughly mixed and melted.
    Layer cream cheese mixture, chicken, cheese and tortillas until full, ending with cheese on top.
    Cook on low for 4-6 hours until bubbly and hot.

    Supreme chicken breast

    Cover the bottom of crock pot with chicken breast and top with sauted mushrooms then a can of cream of chicken soup. Let cook on low 3-4 hours. At this point I usually drain any extra “broth” the chicken has given off to keep the sauce thicker. Top with slices of swiss cheese, crumbled bacon and chives. We really like this with some of the wild rice blends from Uncle Bens. Add a salad or veggies and you are good to go.

    I love super easy recipes. A good go to for me is when I find top round/london broil on sale. I simply put it in the crockpot with my favorite seasoning for about 6-8 hours on low. It comes out delicious and the only work you do is adding the seasoning.

    Enchilada Chicken – got this one from a friend and its Delicious!!

    Put boneless chicken breasts in crock pot with 2 cans diced tomatoes, and one pkg taco seasoning.

    Let cook on high for 4 hours, remove chicken and shred it.
    Put it back in the corkc pot for another 2 hours and servce. Yummy!

    I love buying the rotissoir Chickens at the grocery store. I come home and make biscuits and mashed potatoes with it for dinner and then the left overs I refridgerate for a night or two. then toss the remains in a crockpot with about 6 cups of water and let it slow cook all day. Then about 30 minutes before dinner the bones just pull right away leaving a nice amount of meat and broth and about 4 cups of water (I add enough to make it so) Then add 4 cups of rice and let cook for the rest of the 30 mins. Then serve. nice easy southern chicken and rice.

    My favorite crockpot recipe is:
    1 Red Bell Pepper
    1 Orange Bell Pepper
    1 Yellow Bell Pepper

    All diced into little pieces.

    2 Boneless skinless Chicken Breasts
    1 Whole Can of Rotel
    Various seasonings including salt and pepper.

    I combine all the ingredients smothering the chicken with the Rotel/Bell Pepper mix to insure the chicken is moist. I normally use thawed chicken so I cook it on high for about 3 hours. Once its all done I use two forks and easily shred the meat for delicious tacos or taco salads. Not only is it delicious and healthy BUT its also fairly inexpensive!

    I take a nice cut of pork, tenderloin or roast, and put it in the crockpot with a some red wine (maybe half a bottle, I just eyeball it), some mustard (spicy or plain, whatever you’ve got on hand), and some garlic (again, whatever you’ve got on hand, powder or fresh or minced). Turn it on low and let it go for 5-8 hours. Soooooooo good!

    I love pork roast in the crock pot. Put 2-3 lbs cheap pork roast in pot, add potatoes, carrots, stalk of celery. Add salt, pepper, garlic seasoning, add beef bouillion cube, add water, and pour one small can of tomato sauce over top.Add pinch of brown sugar over the top. Simmer for at least 8 hrs and enjoy! Simple and delicious!

    We like Crockpot Beans, these are great to take to potlucks.
    2 lbs. hamburger browned, medium onion diced, 1 pkg. of bacon pieces, 2 cans of pork n’ beans, 1 can each of kidney beans, butter beans, and garbanzo beans, 1 c. catsup, 1/4 c. brown sugar, 3 T. white vinegar, 1 T. liquid smoke. Put all ingredients in crock pot and cook on low 4-6 hours.
    Very hardy and good!

    Cheesy Corn
    5 pkg. of frozen corn (16 oz.)
    2 pkg. cream cheese (8 oz.)
    1 stick of butter
    6 T. water
    6 T. milk
    4 T. sugar
    10 slices of Am. cheese
    Combine all ingredients in crockpot and cook on low for 4-6 hrs. This makes a lg. crockpot full. This is our favorite side dish!
    ( I make it lighter by using reduced fat cream cheese and slices, doesn’t affect the taste at all.)

    I make a lasagna, but I will have to look for the recipe. Another fave is pot roast.

    1 roast
    beef boullion (can or 2 packs powder mixed with water)
    carrots, potatoes, whatever veggies you want to add

    Put roast in the crockpot, fatty side up. Add broth and veggies. Cook slowly for 8 hrs.

    Yummy!

    onion, chopped (or onion powder in our house)
    1 TB worcestershire sauce
    i large can crushed tomatoes

    cook on low all day and serve over rice, mashed potatoes, or noodles

    My recipe is super simple but really tasty! Take as many pork chops as your family will eat and layer in the bottom of the crock pot. Pour 2 bottles of any BBQ sauce over and cook on low for 6-8 hours. Boil some pasta and serve chops with the now thinned and very tasty sauce poured over. Yummy!

      Mac & Cheese

      •1 (16 oz.) pkg. macaroni
      •1 tablespoon vegetable oil
      •1 (13 oz.) can evaporated milk
      •1 1/2 cups milk
      •1 teaspoon salt
      •4 cups shredded sharp Cheddar cheese
      •1/2 cup melted butter

      Cook macaroni following package directions. Drain well. Spray crockpot bottom and sides of 3 1/2 to 5-quart crockpot. Toss hot macaroni in slow cooker with the vegetable oil then add all remaining ingredients. Stir gently to combine then cover and cook on LOW for 3 to 4 hours, stirring every so often.

    Easy way to cook dried beans in the crockpot:

    1 bag of dried beans (black, red, etc.)
    Water

    Let beans soak overnight in the crock with water covering past 2 inches over the beans. In the morning, drain the water, add the same amount of new water, and cook on low for around 5 hours. You can add any spices you may want. It’s a great way to make your own beans if you don’t want to use canned.

    Crock Pot Black Beans

    1 package of black beans
    2 bacon slices
    1 onion
    2 celery ribs
    3 garlic cloves
    2 cups diced cooked ham
    1/2 tsp. cumin
    1/4 tsp black pepper
    1/4 tsp. red pepper
    1 carton chicken broth

    Soak beans overnight in crock pot. Drain and rinse again. Return beans to crock pot.
    Cook bacon in skillet until crisp, crumble and add to crock pot. Saute onion, celery and garlic in bacon grease stir in rest of ingredients and add mixture to crock pot. Cover and cook 5-8 hours or until beans are tender.

    Makes good chimichangas when you add cooked rice to this mixture and put it in a tortilla and heat it in the oven. Top with lettuce, diced tomatoes, sour cream, cheese, and salsa or guacamole.

    Bar-B-Q

    1 shoulder or Boston Butt Pork Roast

    Dry rub roast with season salt, brown sugar, garlic powder, onion powder & cayenne pepper

    Put in crock on high

    add 1/4 to 1/2 cup apple cider vinegar (1/2 cup if very large roast)

    add 2/3 large smashed garlic cloves & juice from half a lemon

    Cook on high all night or all day (depending on when you want to eat it.

    Remove to roast to platter (leave liquid in crock) tent with foil to cool for 1/2 hour

    Pull pork apart with fork removing any fat clumps.

    When it is cooking do not open and do not turn heat down, if it looks kinda black like it is burning don’t panic, it’s supposed to look that way and it helps give it a smoky flavor.

    Serve on buns with cole slaw & Corky’s or Rendevous Bar-B-Q sauce (don’t use that thick sticky stuff thats like glue, it is almost solid corn syrup and chemical thickners, I am from Memphis and that is just sacrilege!)

    One medium to large cornish game hen, 2 cups orange juice, 1 cup water, 2 tsp molasses and squirt in a BUNCH of honey (about a good 1/2 cup). Cook on medium heat overnight. The oj, honey & molasses makes a wonderful glazy type flavoring. I normally serve with rice pilaf and drizzle some of the sauce on the rice and it’s yummy!!

    Take any cut of beef, roast, broil, etc.
    Place it in the crockpot, pour a bottle of greek pepperoncinis over it and cook for 6-8 hours.
    I like to use Naan flatbread, slightly roasted
    Spread favorite mayo, mustard, etc
    Add sliced onions and tomatoes
    Favorite cheese (I used sliced swiss, hubby used sliced sharp cheddar)
    Place beef and pepper mixture ontop, fold and yummmmmm!

    Take 6 bone in pork chops
    4 tablespoons sofrito
    1 can tomato sauce w/garlic
    4 cloves of garlic
    1 tablespoon brown sugar
    1 teaspon salt
    1 green pepper
    1 red pepper
    1 tablespoon of olive oil
    1 scotch bonnet pepper
    1 package Badia Sazon
    Let cook 4-6 hours
    Serve over steamed brown rice

    Arroz con Pollo (Yellow Rice and Chicken)
    1 whole chicken
    4 tabelspoons sofrito
    1 package Badia Sazon w/annato
    1 sliced onion
    1 sliced red pepper
    4 cups chicken broth
    1 tablespoon olive oil
    2 cups of rice

    Pour chicken broth in first
    Add all ingredients except chicken and rice
    Stir in rice
    Place chicken ontop
    Cook for 4 hours

    Mmmm, so many tasties! Anyway, I love taco dip in the crockpot. 1 block cream cheese, 1 block Velveeta, 2 cups salsa, 1 packet taco seasoning. Dump in, cook on low for abut 3 hours, stir and enjoy with corn chips. Sometimes we add cooked ground beef and rice to this then put on taco shells with shredded lettuce, super quick meal before a game or meeting!

    Reuben Dip!
    1 jar sauerkraut, drained
    1 package cream cheese
    2 cups shredded Swiss cheese
    2 cups shredded cooked corned beef
    1/4 cup thousand island dressing
    combine sauerkraut, cream cheese, Swiss cheese, corned beef and thousand island dressing. Cook on high for 45 minutes, or just until hot and cheese is melted. Stir occasionally while cooking. We like it with cubed rye bread…Mmmmmm!

    heres a fave simple for our big family. you can use less for smaller fams

    2 jars your fave salsa
    4lbs white chicken breast

    spray crock with non stick spray, layer chicken and salsa so meat is completely covered.
    cook until chicken shreds easily. top on tortillas and add any toppings you like. we use cheese, guacamole and blk olives. serve with mexican/spanish rice and you have restraunt style/home made quality chicken tacos! my kids fave! and its fun for guest as well!

    Crockpot Baked Bread
    Grease frozen bread loaf generously with butter. Place in a well-greased baking pan which will fit in slow cooker. Place pan in slow cooker; cover and cook on LOW 2 to 3 hours, or until bread is thawed and beginning to rise.Turn to HIGH and bake 2 to 3 hours, until browned.

    Bayou Red Beans

    1 bag of dried red beans
    1 hambone (I always save the bone from your Christmas or Easter ham and chuck in freezer for this recipe)
    1/3 pound salt pork or bacon cut into small chunks
    1 small white onion minced
    1 stalk celery finely minced
    4 good quality bay leaves
    3/4 crushed garlic cloves
    2 tablespoons Kosher salt
    Combine everything in crock and pour in enough water so that beans are covered and about 4 inches underwater.
    I cook on high over night and check in morning (if beans have absorbed most of the water add another cup or two, stir and turn down to medium or low heat, leave for work (or stay home and let it simmer for the rest of the day until dinner time).
    This is supposed to be nice and saucy, serve over rice or buttermilk cornbread…
    2-4 teaspoons cayenne pepper

    Prep time: 5 minutes Cook time: 8-10 hours ON LOW
    1 3-4 pound shoulder pork roast
    18 ounces barbecue sauce
    1 12-ounce bottle Dr Pepper Soft Drink

    Cook on low for 8 to 10 hours, baste before serving

    We love this beef stroganoff recipe. You 1/4C flour, 1 tbsp dry mustard, 1/4 tsp black pepper and mix together. Dredge about 1 1/2 lb stew meat in the flour mix and put in crock pot. Add 1 sliced medium onion, and 1 pack fresh sliced mushrooms. Then add 4 cups beef stock cook in crockpot on low 8-10 hours or high 6-8 hours. Then mix 1C of sour cream and 1/4C flour. Add the mixture to the beef and serve on top of egg noodles.
