As you know I posted a Crockpot Challenge a few weeks ago to get recipes to cook while we are on vacation. I was floored to get 80+ different recipes!!!!
There were soooo many great recipes to choose from. Can you imagine how hard it was to choose only 7???
I chose the 7 winning recipes because they are things my family likes to eat, were simple, and I didn’t have to buy a ton of ingredients. We are trying to keep our food budget under control on this trip so I choose things that I could use in a few meals, basically I used a lot of the same ingredients in different recipes.
I had grand plans of doing pretty posts everyday with pictures of all the great meals I am making. The problem is my camera just died, which stinks when you are on vacation, so I decided to just post the winners as I cook them!

Breakfast Casserole by Keri P
Sunday night we cooked the breakfast casserole. OMG we now have a new breakfast favorite!!! I LOVED having my breakfast already ready when we woke up. I see me making this one alot!

1 (32 ounce) bag frozen hash brown potatoes
1 pound bacon diced, cooked and drained, or 1 pound cooked ham, cubed
1 medium diced onion
1 green bell pepper diced
1 1/2 cups shredded Cheddar or Monterey jack cheese
1 dozen eggs
1 cup milk
1 teaspoon salt
1 teaspoon pepper (more or less to taste)
Place a layer of frozen potatoes on the bottom of the crock pot, followed by a layer of bacon then onions, green pepper and cheese. Repeat the layering process two or three more times, ending with a layer of cheese.
Beat the eggs, milk and salt and pepper together. Pour over the Crockpot mixture, cover and turn on LOW. Cook for 10 to 12 hours. (I made this a few weeks ago and 10 hours was perfect)
I reduced this a little since there were only a few of us eating. Cooked 10 hours and it was perfect!

Last night we cooked the White Chicken Chili. This stuff is Awesome and super easy to make. I chose this one because it only takes a few ingredients and we love chili. Believe it or not I have never had this kind of chili before. I don’t think I will ever make regular chili again!

White Chicken Chili–AMAZING!
1 32-ounce box chicken stock
3 cans white beans, left undrained
3-4 chicken breast- frozen is fine
1 16-ounce jar salsa
1 8-ounce bag of grated pepper jack or mozzarella cheese
2 teaspoon ground cumin
2 cloves garlic, minced
Black or white pepper to taste
1/2 cup finely crushed corn chips (optional, if you like your chili thicker)
Sour cream, for garnish
Dump everything in the crockpot and cook for 5 hrs on high or 8 hrs on low. Shred chicken in the soup before serving!! SOO YUMMY!!
I reduced this one as well and it was perfect for two people. Enough for dinner and lunch today! The only thing I changed was to add some corn, because we LOVE corn in chili. Even hubby was digging this one!
